For Apple's Preview app, launch Preview, go to preferences, make sure the preferences are the way you *want* them to be. Then simply lock ~/Library/com.apple.Preview.plist. Now when you launch Preview and open your images, they will appear in the recent menu list, but when you relaunch the app they will be gone.
If you want to change any of the preferences, you will need to unlock the file.

Regardless of your reasons for not wanting QT (or any other app) to show your recently opened items, lest you forget that the Open dialog of any app will default back to the directory that contains your most recently opened item. So, don't forget to open another file from another directory before quitting the app.
In case you have DefaultFolder installed, it will even highlight the most recently opened file in the Open dialog.

Apparently Quicktime 6.4 breaks this hint.
Quicktime kept crashing whenever I had it play a movie. It would launch fine but any time I tried to get it to play a movie if would crash. I tried to repair permissions but that didn't help. I finally fixed it by going to the file ~/Library/Preferences/QuickTimeFavorites and returning it to its pre-hint condition.
I think this hint also contributed to my first OmniWeb crash in a while. It happened right after I tried to use OmniWeb to view one of the new iPod commercials, OmniWeb locked up and slowed the Mac OS X user interface to a crawl, but I was finally able to force quit out of it.
My QT 6.4 crashed on launch after this hint even after a Pantehr 10.3.1 upgrade.
I found if I simply deletd the QuicktimeFavorites file form the Library folder it is now functional again.
Like the previous poster meant by 'returning the file to its pre-hint condition,' simply unlocking the 'QuickTimeFavorites' file solves the problem.
It is quite unfortunate that there _still_ seems to be no option to turn off the recent items list. Shouldn't it be mandatory for any app that offers it to also offer a way to turn it off? Messenger download for mac free.

Being frustrated with the old tip not working I played around and bingo..
1. Create a file called 'QuickTimeFavorites', I used TextEdit.
2. Remove the invisible .xxx , for TextEdit it would be the .rtf
3. Place in User/Library/Preferences
No more Recently Played Items.
